Cooking with onions

The reason I have tears in my eyes is onions. That’s my story and I’m sticking with it.

I fancied something warm, quick, and comforting to eat. Which is when I looked into my fridge and said, looks like pasta. Pasta sauce is dead easy to make if you have at least one onion and some tinned tomatoes. (Herbs and spices help too).

I ended up going with a large brown onion, two small red onions, and a handful of spring onions that wanted eating up.

Those onions went into a pan with some olive spread and virgin olive oil. I waited until the red and white were softening and then added the spring onions. They had plenty of time to smell nice and really cook. I added a little salt and a drop of vinegar. Then I let them cook some more.

When they were looking yummy I cut up all the mushrooms I had. They had been in my fridge and also needed using up soon.

I chucked in some basil, sage, salt, pepper, and, erm, whatever else I added that I don’t remember. A little after that in went the mushrooms.

When the mushrooms had reduced and were soft and buttery too, I added two tins of tomatoes. Brought that to a boil with some bay leaves and left to simmer.

Now the pasta is cooking. Updates when I have finished.
