I’m looking for low effort inexpensive healthy eating ideas

I am looking for healthy eating ideas that I can accommodate with both a fairly tight budget and the limited amount of standing up I can do at only one time.

Everything I have found (via Google) so far either assumes I can spank vast amounts of money on expensive food, am a master of the kitchen, or can do a lot of complex prep work. It is starting to look like the hold trinity of low to moderate effort, inexpensive, and healthy is impossible.

This brings me back around to today’s food experiment. I am going to try and make vegetable stew in the slow cooker. I have tried this before (before this blog was a thing). My results have been mixed but generally edible.

To make vegetable stew, “all” you have to do is chop up a load of veg. I can not usually manage that much standing. My workaround has been to go to the kitchen peel and chop a vegetable or two and then leave that for half an hour or so. Then when recovered, go back and do the same to another vegetable.

Eventually, we get to the cooking. I fry the onions and herbs, stick it all in the slow cooker and then leave it be. This will be the first time of attempting to prep and eat on the same day.

I would really like some suggestions for other things I could make that are within my physical and financial means. Treats are fine but I am looking for repeatable staples that I can make even on bad days.
